Lemon Pie
Ingredients
- 1 cup sugar
- 2 eggs yolks, beaten
- 3 tablespoons cornstarch
- 4 teaspoons lemon juice
- zest of one lemon
- 1 teaspoon butter
- 1 cup boiling water
Directions
Mix together the sugar and cornstarch. Place in a double boiler, add the water, and cook for two minutes, stirring constantly. Add the butter, egg yolks, lemon juice, and rind, stirring rapidly. Cook until thick. Pour into a prepared pie crust and let it cool. Refrigerate and serve.
